We subscribe to regenerative farming practices, with intentional rotation of pastures as we seek to build soil carbon, fertility, and health through our grazing practices. Our care for the animals is critical to their health and the healthfulness of the milk they give. We provide quality forage, water, and non-GMO supplements, along with clean living conditions and plenty of space. We choose dairy, and our style of management (grass-fed), for a variety of reasons. Critically, fluid milk, yogurt, and kefir have relatively low greenhouse gas emissions, lower than most other animal proteins. Additionally, and as of February 2024, Twin Springs Creamery is carbon neutral through our collaboration with Carbon Neutral Indiana. To our knowledge we are the only carbon neutral dairy in the state. As a collective we are making the art of dairy farming more sustainable by doing it in community. While many dairy farms are closing, we are working to keep dairy as part of the culture of our community. Underscoring sustainability is food justice. We seek to ensure our product is accessible and available to all who desire it via inclusive collaborations and a dynamic pricing approach. Like most foods, freshness comes with how quick you get it from field to table. We milk, pasteurize, and prepare our products so they get from the cow to your refrigerator within a few days. The breeds we choose are based upon the specific qualities they bring to the glass, like high butterfat and protein, A2 beta casein, and of course taste! Our Jersey cows produce cream-line milk — low-temp vat pasteurized at 145°F for 30 minutes and non-homogenized, so the cream rises to the top.
