This little journey of ours began in 2012 when we quit our big-city desk jobs and lit out to the country, working from farm to farm and studying science and culinary arts along the way. Tyler apprenticed under cheesemaker Peter Dixon at Parish Hill Creamery in Vermont and led cheesemaking operations at Caromont Farm in Virginia. In 2017, we settled on family land in Keith Valley — 65 of the prettiest, most lovingly farmed acres in the rolling green heart of Catoosa County, Georgia. We craft small-batch, handcrafted, raw-milk artisan cheese using natural cheesemaking methods and native cultures cultivated right here on the farm. Our cows graze diverse, perennial pastures year-round, with dry hay during the colder months and a scoop of non-GMO grain at milking time. We also bottle Georgia's first (and currently only) Grade A raw milk for humans — available in half-gallon jugs on-farm and at the Grant Park Farmers Market in Atlanta.
