We proudly offer the USDA Certified Texas Beef program. We have solidified our position as leaders in premium beef production. This program guarantees that Texas beef processed at our facility meets stringent quality and grading standards set in collaboration with and certified by the USDA's Agricultural Marketing Service Division. USDA Certified Texas Beef represents the highest standards of quality and sustainability in beef production. Raised in the expansive ranchlands of Texas, this beef is certified by the United States Department of Agriculture (USDA) to ensure it meets rigorous criteria for tenderness, marbling, and flavor. Whether enjoyed as a succulent steak, a juicy burger, or a hearty roast, USDA Certified Texas Beef offers a premium eating experience that reflects the rich heritage and agricultural excellence of Texas ranching. The cattle are selected according to the best traits for meat quality and production. Cattle are fed a custom finishing ration for up to 150 days. Finished cattle weigh approximately 1350 pounds live weight. This equates to the average side of Certified Texas Beef weighing approximately 400 pounds hanging weight. The cattle dress on average 55-62% of the hanging weight depending on the yield grade. After processing, a side of Certified Texas Beef will yield approximately 220-248 pounds of meat. ***A deposit of $200 on a half beef or $400 on a whole beef is required at the time of order placement*** Beef selection can be done at the ranch with cattle on the hoof, in the facility from beef on the rail, or we can select a side for you. Our butchers will go over cut sheet specifications with you when your order is placed to ensure you receive your animal your way. When your beef is finished, we will schedule transport to our facility where it will be dry aged for 10-21 days, then it will be processed and wrapped according to your specifications. All finished products are vacuum sealed to ensure superior storage quality and freshness. When your steer is ready, we will transport it to our facility where it will dry age up to 21 days. After dry aging, it will then be processed and wrapped according to your order specifications. When your order is ready, you can either come to our facility to pick it up or schedule a delivery.
